Late Night Snack

When I was a young child, my grandmother would make herself a late night snack once we were all tucked up in our beds, or so she thought. I would sneak down and sit on the stairs and smell the lovely cinnamon toast cooking from the kitchen. Occasionally she would catch me, and instead of sending me back to my bedroom she would hand me a fork and ask if I wanted to try some of the eggy toast. My grandmother would slice banana and sprinkle icing sugar over them, just delicious. I have added a little extra, yes you guessed it, peanut butter, enjoy.

4 slices of brioche bread
3 Medium eggs (free range)
1 Teaspoon honey or maple
2 Teaspoon cinnamon
Coconut oil
1 sliced banana
1 Tablespoon Smooth peanut butter
Mix in a bowl the eggs, honey and cinnamon
Place the bread in the mixture and allow a minute to soak up the egg
Heat the oil in a frying pan
Carefully remove the brioche with all the lovely egg mixture and place in frying pan, cook both sides until golden brown
Put two slices on a plate and smother each one with peanut butter and banana slices, put the next two slices on the top of each one to create a sandwich and serve. Oh and don't forget an extra helping of honey or mapl to pour over the toast!
